Eight healthy recipes that will make you fall in love with cauliflower

You won't believe how delicious cauliflower can be if you cook it properly. It's an incredibly healthy food product, and you need just to choose the recipes you like most to fully enjoy it. 

We at Bright Side have collected several of the best ways to prepare this vegetable for you to try out tonight.

Cauliflower lasagna

Ingredients:

  • 250g of cauliflower florets
  • 250g of broccoli florets
  • 200g of lasagna sheets
  • 500ml of sour cream
  • 3 tablespoons of parsley
  • 200g of smoked ham
  • 12 cherry tomatoes
  • 200g of Cheddar cheese

How to make it:

  1. Preheat the oven to 180°C.
  2. Boil the cauliflower and broccoli for 5 minutes.
  3. If your lasagna sheets don't require boiling, put them in hot (not boiling) water for ten minutes. As for homemade lasagna pastry, use it as it is. 
  4. Combine the sour cream with 3 tablespoons of water and the parsley.
  5. Grease a large baking mold with oil.
  6. Lay 1/3 of the pastry or sheets at the bottom. Then place 1/2 of the cauliflower and broccoli, 1/2 of the ham, 1/2 of sliced tomatoes, 1/3 of the cheese and 1/3 of the sauce. Then make all the layers in the same order again. Top the lasagna with the rest of the sauce and cheese. 
  7. Bake the lasagna for 40 minutes. Then adjust the temperature to 190°C and bake for ten more minutes until a golden crust appears.
  8. Serve the dish hot with bread and salad.

Mini cauliflower tortillas

Ingredients:

  • 500g of cauliflower
  • 2 eggs
  • Parsley
  • Salt and pepper according to taste

How to make it:

  1. Divide the cauliflower into florets and shred them in a blender.
  2. Put 2 1/2 cups of the shredded cauliflower in a heatproof bowl. Microwave it for two minutes, then take it out and mix the cauliflower well. Microwave it for two more minutes and mix again. 
  3. Let it cool down a little bit, and press it through a sieve to get rid of the moisture. Be careful, because the cauliflower will be very hot!
  4. Add the eggs, salt and pepper and mix everything thoroughly. You can also add your favorite spices and chopped greens. 
  5. Preheat the oven to 190°C. Line a baking sheet with parchment paper. Spread the batter over the sheet to make tortillas.  
  6. Bake the tortillas for ten minutes. Then turn them over to the other side and bake for five to seven minutes.
  7. Let the tortillas cool down a bit. Heat up a skillet and toast the tortillas, pressing them down with a fork. 
  8. Serve with sour cream or any sauce you like. 

Cauliflower Buffalo nuggets

Ingredients:

  • 1/4 cup of milk (soy or almond)
  • 1 teaspoon of white vinegar
  • 3/4 cup of flour
  • 1 teaspoon of ground dried garlic
  • 1 cauliflower
  • 1 cup of spicy red pepper sauce
  • 4 tablespoons of butter
  • 1/2 teaspoon of white vinegar for the sauce
  • 1/4 teaspoon of sea salt

How to make it:

  1. Preheat the oven to 230°C. Line two baking sheets with parchment paper. 
  2. Combine the milk and vinegar in a small bowl. Let it sit for five minutes, then add the flour and garlic, and mix well.
  3. Drop each floret of the cauliflower into the mixture and lay them on the baking sheets. Leave some space between the florets. Bake for 20 to 25 minutes.
  4. While the cauliflower is baking, combine the spicy sauce, butter, vinegar and salt in a saucepan. Bring the mixture to the boil and then take off the stove. 
  5. Take the cauliflower out of the oven, pour on the sauce and bake for six to eight minutes. 
  6. Serve with celery, carrots and cheese sauce.
     

Cauliflower casserole

Ingredients:

  • 1 cauliflower
  • 150ml of milk
  • 250g of hard cheese
  • 50g of butter
  • 50g of flour
  • Nutmeg
  • Thyme
  • Rosemary
  • 50ml of olive oil
  • Salt and pepper
  • Breadcrumbs

How to make it:

  1. Cut the cauliflower into florets and boil them for 10 to 15 minutes. The cauliflower should be a little bit hard.
  2. Grease the baking mold with the olive oil. Place the cauliflower in one layer. Heat up the oven to 185 °С.
  3. Melt the butter in a saucepan. Stir in the flour. Then add small portions of the milk, stirring constantly.
  4. Simmer the sauce, stirring, until it thickens. Add the herbs, salt and pepper. Then add the grated cheese and stir the sauce until the cheese melts.
  5. Pour the cheese sauce over the cauliflower and sprinkle the dish with the breadcrumbs. Bake the casserole for 20 to 25 minutes until it turns golden. 

Mini cauliflower pizzas

Ingredients:

  • 1 egg
  • 150g + 200g of cheese
  • 1 tablespoon of potato starch
  • 1 tablespoon of olive oil
  • 1 clove of garlic
  • 400g of cauliflower
  • 10 cherry tomatoes

How to make it:

  1. Boil the cauliflower in salted water. Drain the water and let the florets cool down.
  2. Shred the cauliflower in a blender. Add the whipped egg, olive oil, 150g of grated cheese and chopped garlic. You can also add the potato starch to bind the batter. 
  3. Line a baking sheet with baking paper and sprinkle with breadcrumbs. Divide the batter into four or six parts and lay the pizzas on the sheet.
  4. Bake the pizzas for 15 to 20 minutes at 240°С. Then add the grated cheese and the cherry tomatoes and bake for five more minutes. 

Cauliflower cutlets

Ingredients:

  • 2 1/2 cups of cauliflower florets
  • 2 teaspoons of flax seed flour
  • 1/2 cup of chopped spring onion
  • 1/4 cup of chopped bell pepper
  • 1/2 cup of chopped Feta cheese
  • 1/4 cup of breadcrumbs
  • 1/4 cup of chopped parsley
  • Salt and pepper
  • 2 tablespoons of olive oil

How to make it:

  1. Preheat the oven to 200°С. Line a baking sheet with parchment paper and grease it with olive oil (you can also cook without oil). 
  2. Simmer the cauliflower with a small amount of water for three to four minutes. Drain the water and shred the cauliflower into pieces using a blender (do not make a puree).
  3. Put the cauliflower into a bowl. Blend the parsley, bell pepper, onion, cheese, and flax seed flour. It shouldn't be a smooth paste. Combine the mixture with the cauliflower, then add salt and pepper.
  4. Scoop the mixture with a tablespoon and make small oval cutlets. Coat them in the breadcrumbs. 
  5. Place the cutlets on the sheet, leaving some space between them. Bake them for ten minutes, then turn them over to the other side and bake for 15 minutes more. 
  6. Serve the cutlets with any sauce you like.

Cauliflower omelet

Ingredients:

  • 3 eggs
  • 1/2 cup of milk
  • 150 or 200g of cauliflower
  • Greens
  • Salt
  • Seed oil for frying

How to make it:

  1. Rinse the cauliflower and cut it into small florets. Boil the cauliflower in salted water for seven minutes until it's partially cooked. 
  2. Finely chop the greens. Whisk together the eggs and milk, add salt according to taste. 
  3. When the cauliflower is cooked, drain it into a colander. Heat up the oil in a frying pan and add the cauliflower and greens. 
  4. Stir in the egg and milk mixture. Fry one side of the omelet, then turn it over (or just cover it with a lid). It will be even tastier if you add grated cheese.

Cauliflower casserole with ham and cheese

Ingredients:

  • 1 cauliflower
  • 1/2 cup of milk
  • 100g of hard cheese
  • 100 or 150g of ham or sausages
  • 1 egg
  • Salt and pepper

How to make it:

  1. Boil the cauliflower in salted water until it's partially boiled.
  2. Grate the cheese with a large-holed grater. Cut the ham into cubes.
  3. Whisk the egg together with the milk. Add salt and pepper to the mixture and then the ham. You can also use any spices you like.
  4. Lay the cauliflower into a baking mold and pour on the mixture. Sprinkle the casserole with the grated cheese.
  5. Bake the casserole at 180°С until it turns golden.
