What can be better than sitting on a sofa, cuddled up in cozy blanket, sipping tea, and nibbling on a few (or more) fresh, delicious cookies after a long, cold day? You can argue that this situation is impossible; you’re busy, and never have enough time or energy for baking yummy goods.
Here at Bright Side, we know how little time you have for desserts. That is why we put together a list of ten recipes for the best cookies that only take 15 minutes to make.
Coconut cookies
You will need:
- 3.5 oz (100 g) of flour
- 3.5 oz (100 g) of sugar
- 7 oz (200 g) of coconut flakes
- 2 eggs
- 1 teaspoon of baking powder
Directions:
- Beat the eggs with sugar.
- Add coconut flakes, mix.
- Add flour and baking powder, mix again.
- Cool the dough for 30 minutes.
- Wet hands and shape cookies.
- Bake at 350F (180°C) for 15 minutes.
Apple cookies
You will need:
- 4 oz (120 g) of sugar
- 1/2 teaspoon of vanilla extract
- 4 eggs
- 7 oz (200 g) of margarine
- 17 oz (500 g) of flour
- 1 teaspoon of baking powder
- 3 apples
Directions:
- Mix eggs, sugar, and vanilla.
- Add softened margarine and mix again.
- Add flour and baking powder, and mix with a spoon.
- Peel apples and cut into small cubes, add to the mix.
- Put the mixture on the baking tray with baking parchment on. Be careful not to put the cookies too close together. Bake at 400 F (200 °С) for 10–15 minutes.
Sesame cookies
You will need:
- 2.5 oz (70 g) of flour
- 2 oz (60 g) of butter
- 4oz (120 g) of sugar
- 1 egg
- 1/2 teaspoons of vanilla extract
- 1 teaspoon of fresh lemon juice
- 5.5 oz (160 g) of sesame seeds
- 1/2 teaspoons of baking powder
- 1/2 teaspoons of salt
Directions:
- Mix together flour, baking powder and salt.
- Whisk softened butter with sugar. Add an egg, vanilla, and lemon juice to the mixture. Whip for 20-30 seconds.
- At low speed, add flour little by little to the mixer
- Mix in sesame seeds (make sure to lightly roast sesame seeds beforehand) with a spatula.
- Pre-heat the oven to 350F (180°C). Put the mixture on the baking tray with baking parchment on. Put the cookie mixture about 3-4 cm apart because the cookies will spread.
- Bake 8-15 minutes depending on the size.
Chocolate cookies
You will need:
- 8.5 oz (240 g) of baking chocolate
- 4 tablespoons of butter
- 2/3 cups of flour
- 1/2 teaspoons of baking powder
- 1/2 teaspoons of salt
- 2 big eggs
- 3/4 cups of sugar
- 1 teaspoons of vanilla sugar
- 150 g chocolate broken up in pieces
Directions:
- Pre-heat the oven to 350F (180°C).
- Lay out the baking tray with baking parchment.
- Chop the chocolate into small pieces.
- Whip sugar, eggs and vanilla sugar (for about 4 minutes).
- Melt 8.5 oz (240 g) of chocolate with butter on a bain-marie or in a microwave.
- Add chocolate to the mixture and slowly mix.
- In a separate bowl mix flour, baking powder and salt. Add it to the mixture and mix.
- Add remaining chocolate to the mixture and mix.
- Put the cookie mixture about 5-7 cm apart.
- Bake for 12-15 minutes.
Homemade oatmeal cookies
You will need:
- 3.5 oz (100 g) of butter
- 1 cup of sugar
- 2 eggs
- 1 cup of oats
- 1 cup of flour
- nuts, candied and dried fruits (optional)
Directions:
- Mix butter with sugar, put in a bowl and mix with a fork.
- Blend with a mixer until the mixture is even.
- Add eggs and mix.
- Add a cup of oats.
- Mix and add stuffing, i.e. nuts and fruits. You should add about 2 cups of stuffing.
- Mix and add flour.
- Make dough balls, dip in flour and shape into cookies.
- Put the mixture on the baking tray with baking parchment and olive oil on.
- Bake at 400 F (200 °С) for 15 minutes.
Milk biscuits
You will need:
- 14 oz (400 g) of flour
- 7 oz (200 g) of sugar
- 3.5 oz (100 g) of butter
- 1 egg
- 3 oz (80 ml) of milk
- 1/2 teaspoons of baking powder
Directions:
- Mix softened butter with sugar.
- Add egg, milk and baking powder, mix
- Add flour and knead the dough.
- Roll out the dough into a 7–10 mm sheet.
- Use a special form for baking with wavy edges or just a regular metal molds for tartlets to cut out the cookies.
- Put the mixture on the baking tray with baking parchment on. Pre-heat the oven to 350F (180°C).
- Bake for 15 minutes until the edges darken.
Banana cookies
You will need:
- 2 big soft bananas
- 1 cup of oats
- nuts, raisins, chocolate, cinnamon
Directions:
- Mix bananas with oats.
- Add nuts, raisins, chocolate, cinnamon (if desired).
- Bake at 350F (180°C) for 15 minutes.
"Madeleine" cookies
You will need:
- 4oz (120 g) of flour
- 2 eggs
- 3 oz (80 g) of sugar
- 3 oz (90 g) of butter
- 1 tablespoon of lemon juice
Directions:
- Soften butter, add eggs and sugar.
- Whisk the mixture.
- Add flour and lemon juice. Thoroughly mix.
- Mold dough into "Madeleine" shaped forms for cookies ( or any other).
- Bake at 350F (180°C) for 12-15 minutes.
"Coffee grains" cookies
You will need:
- 4 tablespoons of milk
- 5 tablespoons of instant coffee
- 7 oz (200 g) of butter
- 8 oz (200 ml) of cream (30%)
- 9 oz (250 g) of sugar
- 3 tablespoons of cocoa
- 22 oz (650 g) of flour
Directions:
- Dissolve coffee in hot milk. Add butter, sugar, cream and cocoa. Whisk all together.
- Add flour and knead the dough.
- Make dough balls. Make them a bit longer (they should look like coffee grains).
- Use a toothpick to create a lengthwise cut (look at the picture).
- Put cookies on a tray. Heat the oven to 350F (180°C). Bake cookies for 12-15 minutes.
"Guests are here" cookies
You will need:
- 2 egg yolks
- 1 pack of vanilla sugar
- 9 oz (230) g of flour
- 3 oz (80 g) of powder sugar
- 4oz (120 g) of butter
- 3/4 teaspoons of lemon zest
Directions:
- Pre-heat the oven to 350F (180°C).
- Set the baking tray by putting baking parchment, olive oil, and flour on it.
- Sift flour and sugar into a bowl.
- Add softened butter, egg yolks and lemon zest.
- Mix until even.
- Knead for 5-10 minutes until the dough becomes elastic.
- Shape dough into a "sausage" and cut into circles.
- Put dough on baking tray and bake for 10 minutes.
