I don't think much will happen, it's not just juice in the leaves, but also flesh. Might not be as satisfying as it seems

Similar to a cross section of aloe vera leaf, they're clear to let in light cause they store their chloroplasts towards the center of each leaf, if you pricked it, it would most likely ooze a bit of water and plant juices.
